Ingredients:
- 50g butter
- 1 large Onion, finely chopped
- 1 x Chicken boneless, boiled and shredded
- 1tsp black pepper
- 1/2 tsp White pepper
- 1 tsp Salt
- 1 tbsp Plain flour
- 1 cup Milk
- Maggi liquid seasoning, to taste (optional, but highly recommended!)
- 2 sheets x Ready to roll Puff Pastry
- 1 x Egg, whisked for brushing
Method:
- In a frying pan, melt the butter, then add the onion. Saute for a few minutes, until the onion becomes translucent.
- Add the shredded chicken,salt, black pepper, white pepper, and flour to the pan, and fry for a couple of minutes, coating the chicken evenly in the flour and spices.
- Turn down the heat, then pour in the milk whilst stirring, to avoid lumps. Keep stirring for a few minutes, until the milk has dried.
- Add a splash of liquid seasoning. Taste and add more salt if needed. Then set aside to cool.
- Preheat oven to 220c, whilst you prepare the patties.
- On a floured surface, roll out the sheets of puff pastry. Cut into equal sized squares, depending on how big you want the patties to be.
- Add a tablespoon of the chicken mixture to each square of one sheet of puff pastry, leaving about half a centimetre around the edges where you will pinch the patties shut.
- Brush the edges of the patties with egg.
- Cover the patties with the the squares from the second sheet of puff pastry. Using a fork, go around each patty, pushing the two layers of puff pastry shut. Prick the top of the patty with the fork, to let out air whilst baking.
- Brush each patty with egg. Place on a baking tray lined with greaseproof paper.
- Baked in the oven for 20-25 minutes, or until the pastry has puffed up and is golden brown.
- Leave on a wire rack to cool slightly, then serve and enjoy with a nice cup of tea!
Can be stored in the fridge for upto 5 days.
To reheat, place in a preheated oven for 3 minutes. Reheating in the microwave will make them go soggy.
Note: Instead of puff pastry, you could slice some croissants, spread the mixture in between the slices, and bake in the oven for 2 to 3 minutes. Delicious!
