Creamy Philly Cheesesteak Mac n Cheese

Serves 4  546 calories per portion -62g protein-48g carbs-11g fat

Ingredients

  • 800g Beef Mince
  • 20g Butter
  • 1 tbsp Garlic, minced
  • 1 Onion, chopped
  • 1/2 Red Bell Pepper
  • 1/2 Green Bell Pepper
  • 1/2 Yellow Bell Pepper
  • 1 1/2 tsp Salt
  • 1 1/2 tsp Pepper
  • 1 1/2 tsp Paprika
  • 1 1/2 tsp Chilli Flakes
  • 140g Light Cream Cheese
  • 50g Mozzarella
  • 3 Light Cheese Slices
  • 125ml Pasta Water
  • 240g Uncooked Macaroni

Method

  1. Boil the macaroni according to the packet. Remove 125ml pasta water. Drain the macaroni, and set aside.
  2. In a frying pan, melt the butter. Add the garlic, onions, and bell peppers, and fry for about 5 minutes.
  3. Move the peppers to to one side of the pan, and add the mince. Cook for about 8 minutes, then add the salt, pepper, paprika, and chilli flakes. Mix all the mince and peppers together, and cook until golden brown. Make sure the mince is cooked properly before adding the cheeses.
  4. Stir in the cream cheese, mozzarella, cheese slices, and pasta water. Mix until creamy.
  5. Add the pasta, and mix thoroughly. Serve and enjoy!

Great for meal prepping. This makes 4 servings of 546 calories each. Can be stored in the fridge for up to 5 days.
