Serves 4 – approx 500 calories each
Ingredients
- 2 tbsp oil
- 4 eggs, whisked
- 1 cup cooked prawns
- 2 sausages, chopped
- 3 cups Boiled Rice
- 1 cup Mixed Vegetables (I used frozen mix veg)
- 1 Medium Onion, finely chopped
- 1 tbsp Soy Sauce
- 1/2 tbsp Salt
- 1 bunch Spring Onions, chopped
Method:
- In a large wok, heat the oil until the wok starts to smoke (This stops the food from sticking to the wok).
- Add the whisked eggs, and scramble them. Then add the prawns and sausages. Stir fry for a minute.
- Next, add the boiled rice, and stir until mixed well.
- Add the vegetables and onions to the rice, and fry for 2 minutes.
- Now add the soy sauce and salt, mix well, and taste. Add more if needed.
- Turn off the heat, sprinkle the spring onions, and serve!
