Stir Fried Rice

Serves 4 – approx 500 calories each

Ingredients

  • 2 tbsp oil
  • 4 eggs, whisked
  • 1 cup cooked prawns
  • 2 sausages, chopped
  • 3 cups Boiled Rice
  • 1 cup Mixed Vegetables (I used frozen mix veg)
  • 1 Medium Onion, finely chopped
  • 1 tbsp Soy Sauce
  • 1/2 tbsp Salt
  • 1 bunch Spring Onions, chopped

Method:

  1. In a large wok, heat the oil until the wok starts to smoke (This stops the food from sticking to the wok).
  2. Add the whisked eggs, and scramble them. Then add the prawns and sausages. Stir fry for a minute.
  3. Next, add the boiled rice, and stir until mixed well.
  4. Add the vegetables and onions to the rice, and fry for 2 minutes.
  5. Now add the soy sauce and salt, mix well, and taste. Add more if needed.
  6. Turn off the heat, sprinkle the spring onions, and serve!
