Ingredients
For the Peri Peri Chicken:
- 800g Chicken boneless, cubed
- 5 Garlic cloves, minced
- 100g Nando’s Medium Peri Peri marinade
- 1 tsp Salt
- 1 tsp Pepper
- 2 tsp Oregano
- 2 tsp Paprika
- 2 tsp Onion Powder
- 20g Light Butter for cooking
- 240g Uncooked Macaroni
For the Creamy Peri Peri Cheese Sauce:
- 1/2 Medium Onion, finely chopped
- 1 Garlic clove, minced
- 2 tbsp Tomato Paste/Puree
- 300ml Milk
- 180g Light Cream Cheese
- 40g Low Fat Cheddar
- 50g Peri Peri Medium Hot Sauce
- 100ml Pasta water
- Extra seasoning, if needed
- Chopped Parsley, to garnish
Method
- In a bowl, add all the chicken ingredients to the chicken, mix thoroughly, and leave to marinate for at least 30 mins, or, for the best flavour, overnight.
- Cook the macaroni according to the instructions on the packet. Save 100ml of pasta water before you drain the macaroni.
- In a pan, fry the chicken on a medium heat for about 4-5 minutes or until cooked through.
- For the sauce, sauté the onions, then add the milk. Stir in the cream cheese on a low heat, so the milk and cheese doesn’t split. Now add the low fat cheddar, tomato paste, peri peri sauce, pasta water, and seasoning. Mix till creamy and it starts to thicken, then remove from heat.
- Add the macaroni to the sauce, and mix thoroughly.
- You can add the chicken to the macaroni, or serve on the side. Garnish with parsley, and enjoy!
