Ingredients
For the Avocado:
- 1 Avocado
- 2 tbsp Fat-Free Yoghurt
- 1/2 Lemon
- 2 Slices Rye Bread, toasted
- Cayenne Pepper, a pinch
- 75g Smoked Salmon
- 1/4 Cucumber, ribboned with a veg peeler
- Cress, to garnish
For the Dressing:
- 1 tbsp Mint, finely chopped
- 1/2 Red Chill, deseeded
- 1/2 Lemon, zest and juice
- 1 Tomato, finely diced
- 1 tsp white vinegar
Method
- To make the dressing, mix all the ingredients together with some seasoning.
- Scoop the avocado flesh into a bowl. Add the yoghurt and lemon juice, and mash with a fork. Season with salt and black pepper.
- Divide the avocado between the toasted rye bread, sprinkle over a little cayenne pepper and add the smoked salmon and cucumber. Spoon over the dressing, then top with the cress.
