Avocado on toast with smoked salmon

Ingredients

For the Avocado:
  • 1 Avocado
  • 2 tbsp  Fat-Free Yoghurt
  • 1/2 Lemon
  • 2 Slices Rye Bread, toasted 
  • Cayenne Pepper, a pinch
  • 75g Smoked Salmon
  • 1/4 Cucumber, ribboned with a veg peeler
  • Cress, to garnish
For the Dressing:
  • 1 tbsp Mint, finely chopped
  • 1/2 Red Chill, deseeded
  • 1/2 Lemon, zest and juice
  • 1 Tomato, finely diced
  • 1 tsp white vinegar

Method

  1. To make the dressing, mix all the ingredients together with some seasoning.
  2. Scoop the avocado flesh into a bowl. Add the yoghurt and lemon juice, and mash with a fork. Season with salt and black pepper.
  3. Divide the avocado between the toasted rye bread, sprinkle over a little cayenne pepper and add the smoked salmon and cucumber. Spoon over the dressing, then top with the cress.
