Serves 4 484 Calories per portion – 47g protein-39g carbs-15g fat
Ingredients
For the BBQ Chicken:
- 800g Chicken boneless, cubed
- 1.5 tsp Salt
- 2 tsp Oregano
- 1 tsp Chilli Flakes
- 2 tsp Onion Powder
- 2 tsp Paprika
- 2 tsp Olive oil
- 25g Light Butter, for cooking
- 4-5 Garlic cloves, minced
- 2 tbsp Fresh Parsley, chopped
- 100g Reduced Sugar BBQ Sauce
- 60g Mozzarella
For the Crispy Potatoes:
- 800g Potatoes, cubed
- 1 tsp Salt
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1 tsp Oregano
- 2 tsp Olive oil
Method
For the Crispy Potatoes:
- Preheat the oven to 200c.
- Wash and peel the potatoes. Cut them into 1 inch cubes and season with the spices.
- Spread out on a non stick baking tray and spray with cooking oil. Bake in the oven for 35-40 minutes, turning occasionally, so they don’t burn.
For the BBQ Chicken:
- Marinate the chicken in the herbs, spices, and olive oil.
- In a pan, melt the butter, and fry the chicken on a medium heat, until cooked through.
- Lower the heat, then add the minced garlic, parsley, and BBQ sauce. Mix well.
- Still on a low heat, add 2 tbsp water and the cheese, then cover until it melts.
- Add the crispy potatoes, and mix until all the potatoes are covered in the sauce. Enjoy!
