Serves 4 471 Calories per portion – 54g protein-35g carbs-11g fat
Ingredients
For the Fries:
- 900g Uncooked Potatoes, cut into fries
- 2 tsp Salt
- 2 tsp Oregano
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 2 tsp Paprika
- 2 tsp Cumin Powder
- 2 tsp olive oil
For the Beef:
- 800g Lean Beef Mince
- 1 Medium Onion, finely diced
- 1 tsp Salt
- 1tsp Pepper
- 1 tsp Chilli Powder
- 1 tsp Paprika
- 1 tsp Oregano
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Cumin Powder
- 30g Light Butter, for cooking
For the Topping:
- 70g Low Fat Cheddar or Mozzarella
- 1 Medium Red Onion, finely chopped
- 2 Tomatoes
- 2 tbsp Fresh Coriander, chopped
- Jalapenos
- Lime Juice, to taste
For the Garlic Sauce:
- 100g Low Fat Yoghurt
- 80g Light Mayo
- 0.5 tsp Salt
- 0.5 tsp Garlic Powder
- 0.5 tsp Onion Powder
- 1/2 Lime Juice
Method
- Preheat the oven to 200c. Wash and peel the potatoes, and cut them into fries. Add the herbs, spices, and olive oil to the fries, and mix to coat evenly. Spread thinly on a baking tray and bake for 20-25 minutes.
- In a frying pan, melt the butter, then add the onions and cook until caramelised. Add the beef, and cook on a high heat till brown. Add the beef herbs and spices, and cook for a further 4-5 minutes, until golden brown.
- To make the garlic sauce, mix the yoghurt and mayo till combined, then add the salt, garlic powder, onion powder, and lime juice.
- Layer the beef onto the fries, and add the toppings. Sprinkle the cheese on top, and pop back into the oven for 5 minutes, until the cheese has melted.
- Drizzle with garlic sauce, and enjoy!
