Chia pudding

Ingredients

  • 500ml Oat Milk
  • 100g Chia Seeds
  • 2 tsp Vanilla Extract
  • 1 tbsp Maple Syrup
  • 3 Apples, peeled, cored and chopped
  • 30g Raisins
  • 1/2 tsp Ground Sweet Cinnamon

Method

  1. Put the oat milk, chia seeds, vanilla and maple syrup in a large bowl. Stir to combine then cover and refrigerate overnight or for at least 6-8 hours.
  2. Combine the apples, raisins and cinnamon with 3 tbsp of water in a medium pan. Over a medium heat, cover and simmer for 10 minutes until the apples are softened. Remove from the heat and leave to cool completely.
  3. Give the chia pudding a good stir and divide between four serving glasses. Top with the apple mixture to serve.
