Ingredients
For the Chicken:
- 2 Chicken Boneless, cut into 4 thin fillets
- 1 tsp Salt
- 1 tsp Pepper
- 2 tsp Cumin Powder
- 1 tbsp Oregano
- 1 tbsp Garlic Powder
- 1 tbsp Smoked Paprika
- 2 tsp Olive Oil
For the Rice:
- 230g Uncooked Basmati Rice
- 440ml Water
- 1 tsp Salt
- 1 tsp Turmeric Powder
- 1 tsp Paprika
- 1 tsp Cumin Powder
- 1 Medium Onion, sliced
- 1/2 Red Bell Pepper, sliced
- 1/2 Green Bell Pepper, sliced
For the Green Sauce:
- 200g Fat Free Greek Yoghurt
- 60g Light Mayo
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 5 Garlic cloves
- Fresh Coriander, big handful
- 1/2 Lemon juice
Method
- Add all the chicken spices and olive oil to the chicken, and mix thoroughly, making sure both sides of the fillets are covered with the spices. Fry for 3-4 minutes each side, making sure its cooked through, and set aside.
- In the same pan, fry the onions and bell peppers with the spices for 3-4 minutes, then add the rice and fry for a further 2 minutes, before adding the water. Bring to the boil, then leave on simmer for 8-10 minutes, until cooked.
- To make the green sauce, add the ingredients to a blender, and blend till combined.
- Place the chicken on the rice, drizzle with green sauce, and enjoy!
