Serves 4 555 Calories per portion -50g protein-47g carbs-18g fat
Ingredients
For the Chicken:
- 800g Chicken boneless, cubed
- 20g Soy Sauce
- 2 tsp Black Pepper
- 2 tsp Garlic Powder
- 1 tsp Chilli Flakes
- 2 tsp Olive oil, for cooking
For the Pad Thai sauce:
- 30g Soy Sauce
- 40g Tamarind Paste/Sauce
- 30g Honey
- 5g Fish Sauce
- 20g Sriracha
- 2 lime juice
For Cooking:
- 4 Garlic Cloves, finely chopped
- 1 Onion, finely chopped
- 3 eggs
- 400g Cooked Rice Noodles
- Spring Onions, a handful
- Bean Sprouts, a handful
- 30g Crushed Peanuts, for garnish
- Chilli Flakes, for garnish
- Lime wedge, to serve
Method
- In a bowl, add the chicken, the chicken spices and soy sauce, and mix thoroughly. Heat the olive oil in a wok, and fry the chicken until cooked.
- In a bowl, mix all the ingredients for the Pad Thai sauce, and set aside.
- In the wok, fry the garlic, onions, and half the spring onions for 1-2 minutes, then add the eggs and scramble.
- Add the cooked rice noodles to the wok, and the Pad Thai sauce, and mix thoroughly. If the sauce is too runny, add some more tamarind sauce, before adding to the noodles.
- Add the chicken, the rest of the spring onions, crushed peanuts, and chilli flakes, to the noodles, and mix.
- Serve with a wedge of lime, and enjoy!
