Serves 4 511 Calories per portion -51g protein-45g carbs-12g fat
Ingredients
For the Chicken:
- 700g Chicken boneless, cut into strips
- 1 tsp Salt
- 1 tsp Pepper
- 1 tbsp Italian Herbs
- 1 tbsp Smoked Paprika
- 1 tbsp Garlic Powder
- 2 tsp Olive oil
- 250g Uncooked Spaghetti (I use whole wheat spaghetti)
- Chopped Parsley, to garnish
For the Alfredo Sauce:
- 300ml Semi Skimmed Milk
- 150g Light Cream Cheese
- 40g Parmesan or vegetarian substitute
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Italian Herbs
- 70ml Pasta water
Method
- Boil the spaghetti according to the instructions on the packet. Save 70ml of pasta water, then drain.
- For the chicken, add the herbs and spices to the chicken, and mix thoroughly. Fry on a medium to low heat, making sure the seasoning doesn’t burn.
- In a pan, warm the milk, then, on a low heat, stir in the cream cheese, making sure the cheese and milk doesn’t split. Add the herbs and spices, parmesan, and pasta water, and stir until the sauce starts to thicken.
- Add the cooked chicken to the sauce, and cook for a further 2 minutes, then add the spaghetti.
- Stir until all the spaghetti is covered in the creamy sauce. Garnish with parsley, and enjoy!
