Creamy Garlic Beef Pasta

Serves 4  477 calories per portion -47g protein-51g carbs-9g fat

Ingredients

For the Mince:
  • 600g Lean Beef Mince
  • 250g uncooked Pasta
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Olive oil
  • Parsley to garnish
For the Creamy sauce:
  • 2 tsp Olive oil
  • 4 Garlic cloves, minced
  • 1 Medium Tomato, chopped
  • 1 Medium Red Bell Pepper, chopped
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Mixed herbs
  • 1 tsp Paprika
  • 150g Light Cream Cheese
  • 1/2 Cup Pasta water

Method

  1. Boil the pasta. Save 1/2 cup of the drained pasta water.
  2. To make the creamy sauce, add the oil to a pan, then add the garlic and sauté for 1 minute.
  3. Add the tomato, red bell pepper, spices and herbs, and fry for 3-4 minutes.
  4. Stir in the cream cheese and the pasta water, and mix until combined. Leave to cool slightly, and then blend.
  5. While the sauce cools, add 1 tsp olive oil to a frying pan, and add the mince. Cook it on a medium high heat, breaking it up into smaller pieces.
  6. Once the mince has browned, add the spices, and fry for another 2 minutes.
  7. Add the mince and sauce to the pasta, and stir thoroughly. Garnish with parsley (optional).

Great for meal prepping. This recipe serves 4, and each serving is 477 calories. Can be stored in the fridge for up to 5 days
