Serves 4 502 Calories per portion -53g protein-38g carbs-15g fat
Ingredients
For the Chicken:
- 800g Chicken boneless, cubed
- 4 Garlic cloves, minced
- 1 tsp Salt
- 2 tsp Paprika
- 1 tsp Chilli flakes
- 2 tsp Mixed Herbs
- 2 tsp Onion granules
- 2 tsp Olive oil
For the Crispy potatoes:
- 800g Uncooked Potatoes, cubed
- 1 tsp of each of the herbs and spices used for the chicken
- Cooking oil spray
Creamy Garlic Parm Sauce:
- 120ml Milk
- 100g Light Cream Cheese
- 40g grated Parmesan/vegetarian substitute
- 50g Shredded Mozzarella or any low fat cheese
- Extra seasoning if needed (salt, garlic, mixed herbs)
Method
For the Potatoes:
- Preheat oven to 200c.
- Wash and peel the potatoes. Cut them into 1 inch cubes and season with the spices.
- Spread out on a non stick baking tray and spray with cooking oil. Bake in the oven for 35-40 minutes, turning occasionally, so they don’t burn.
For the Chicken and sauce:
- Whilst the potatoes are baking, heat 2 tsp olive oil in a frying pan, and fry the chicken on a high heat for 4-5 minutes, or until cooked through.
- Add the garlic, herbs and spices, and cook for a further 2 minutes.
- Lower the heat, and add the milk and cream cheese. Mix thoroughly to make sure there are no lumps.
- Stir in the mozzarella and parmesan, and check the seasoning.
- Add the potatoes to the creamy chicken mixture, stir, and enjoy!
