Creamy Garlic Chicken and Cheesy Potatoes

Serves 4  502 Calories per portion -53g protein-38g carbs-15g fat

Ingredients

For the Chicken:
  • 800g Chicken boneless, cubed
  • 4 Garlic cloves, minced
  • 1 tsp Salt
  • 2 tsp Paprika
  • 1 tsp Chilli flakes
  • 2 tsp Mixed Herbs
  • 2 tsp Onion granules
  • 2 tsp Olive oil
For the Crispy potatoes:
  • 800g Uncooked Potatoes, cubed
  • 1 tsp of each of the herbs and spices used for the chicken
  • Cooking oil spray
Creamy Garlic Parm Sauce:
  • 120ml Milk
  • 100g Light Cream Cheese
  • 40g grated Parmesan/vegetarian substitute
  • 50g Shredded Mozzarella or any low fat cheese
  • Extra seasoning if needed (salt, garlic, mixed herbs)

Method

For the Potatoes:
  1. Preheat oven to 200c.
  2. Wash and peel the potatoes. Cut them into 1 inch cubes and season with the spices.
  3. Spread out on a non stick baking tray and spray with cooking oil. Bake in the oven for 35-40 minutes, turning occasionally, so they don’t burn.
For the Chicken and sauce:
  1. Whilst the potatoes are baking, heat 2 tsp olive oil in a frying pan, and fry the chicken on a high heat for 4-5 minutes, or until cooked through.
  2. Add the garlic, herbs and spices, and cook for a further 2 minutes.
  3. Lower the heat, and add the milk and cream cheese. Mix thoroughly to make sure there are no lumps.
  4. Stir in the mozzarella and parmesan, and check the seasoning.
  5. Add the potatoes to the creamy chicken mixture, stir, and enjoy!
