Serves 4 490 Calories per portion -51g protein-45g carbs-11g fat
Ingredients
For the Shrimp:
- 800g Shrimp/Prawns
- 5 Garlic cloves, minced
- 1 tsp Salt
- 1 tsp Chilli Flakes
- 1.5 tsp Smoked Paprika
- 2 tsp Italian Herbs
For the Sauce:
- 40g Light Butter
- 250 ml Milk
- 120g Light Cream Cheese
- 40g Parmesan or vegetarian substitute
- 25ml Pasta water
- 1 Lemon Juice
- 2 tbsp Fresh Parsley, chopped
- Extra seasoning, if needed
- Extra Lemon, if needed
- Handful of Spinach, roughly chopped
- 250g Uncooked Linguine or any pasta
Method
- Boil the linguine/pasta according to the instructions on the packet. Save 25ml of pasta water, then drain.
- Add the garlic, herbs and spices to the prawns, and fry for 2 minutes in a wok or large pan. Lower the heat, the add the butter, lemon juice, and chopped parsley.
- Keeping the heat low, stir in the cream cheese, parmesan, and milk gradually, until the sauce thickens. Add the spinach and mix until it wilts. Check seasoning and lemon, add more if needed.
- Add the linguine/pasta, and mix thoroughly. Garnish with parsley, and enjoy!
