Ingredients
For the Chipotle Chicken:
- 700g Chicken boneless, cubed
- 80g Chipotle Chilli Paste
- 6 Garlic cloves, minced
- 25g Honey
- 1 Lime juice
- 1.5 tsp Salt
- 1.5 tsp Cumin Powder
- 1.5 tsp Smoked Paprika
- 15g Butter
- 200g Uncooked Pasta
For the Creamy Sauce:
- 300ml Low Fat Milk
- 160g Light Cream Cheese
- 40g Grated Parmesan or vegetarian substitute
- 50g Chipotle Chilli Paste
- 0.5 tsp Chilli Flakes
- 1 tsp Salt
- 50ml Pasta water
- Fresh Parsley for garnish, chopped
Method
- In a large pan, boil the pasta according to the instructions on the packet. Once cooked, remove 50ml pasta water, then drain.
- To the chicken, add all the chicken spices, chipotle paste, lime juice, honey, and garlic, and mix thoroughly. Leave to marinate for 30 minutes, or overnight for best results.
- In a frying pan, melt the butter, and fry the chicken for 4-5 minutes, or until cooked through.
- To make the creamy sauce, in a bowl or blender, blend all the sauce ingredients together until thoroughly mixed.
- Add the chicken to the pasta, and pour over the creamy sauce. Cook until sauce starts to thicken.
- Garnish with parsley, and enjoy!
