Creamy Spicy Chipotle Chicken Pasta

Ingredients

For the Chipotle Chicken:
  • 700g Chicken boneless, cubed
  • 80g Chipotle Chilli Paste
  • 6 Garlic cloves, minced
  • 25g Honey
  • 1 Lime juice
  • 1.5 tsp Salt
  • 1.5 tsp Cumin Powder
  • 1.5 tsp Smoked Paprika
  • 15g Butter
  • 200g Uncooked Pasta
For the Creamy Sauce:
  • 300ml Low Fat Milk
  • 160g Light Cream Cheese
  • 40g Grated Parmesan or vegetarian substitute
  • 50g Chipotle Chilli Paste
  • 0.5 tsp Chilli Flakes
  • 1 tsp Salt
  • 50ml Pasta water
  • Fresh Parsley for garnish, chopped

Method

  1. In a large pan, boil the pasta according to the instructions on the packet. Once cooked, remove 50ml pasta water, then drain.
  2. To the chicken, add all the chicken spices, chipotle paste, lime juice, honey, and garlic, and mix thoroughly. Leave to marinate for 30 minutes, or overnight for best results.
  3. In a frying pan, melt the butter, and fry the chicken for 4-5 minutes, or until cooked through.
  4. To make the creamy sauce, in a bowl or blender, blend all the sauce ingredients together until thoroughly mixed.
  5. Add the chicken to the pasta, and pour over the creamy sauce. Cook until sauce starts to thicken.
  6. Garnish with parsley, and enjoy!
