Serves 4 500 Calories per portion – 48g protein-56g carbs-10g fat
Ingredients
For the Crispy Chicken:
- 800g Chicken boneless, cubed
- 1 tsp Salt
- 1 tsp Pepper
- 2 tsp Garlic Powder
- 2 tsp Paprika
- 40g Cornflour
For the Sticky Orange Sauce:
- 350ml Orange Juice, preferably fresh
- 50ml Low Sodium Soy Sauce
- 30g Honey
- 10g Cornflour
- 50ml Water
- 1 tsp Chilli Flakes
- 3 Garlic cloves, minced
- 1 tbsp Ginger, finely chopped
- Orange Zest, optional
To Serve:
- 207g Uncooked Basmati Rice
- Sesame Seeds
- Spring Onions, chopped
Method
- Boil the rice according to the instructions on the packet.
- Preheat the oven to 200c.
- In a bowl, add the spices and cornflour to the chicken, and mix thoroughly, making sure each piece of chicken is coated evenly.
- Spread the chicken on a baking tray, and bake for 20 minutes, or until the chicken is cooked through and nice and crispy (You could fry the chicken in 2 tsp oil, if you don’t want to bake it).
- In a pan, add the ginger, garlic, and chilli flakes, and cook for 2 minutes.
- Add the orange juice, soy sauce, honey, and orange zest, and cook on a medium heat until it reduces.
- Mix the water and cornflour, the stir it into the orange sauce. Cook until it starts to thicken.
- Add the chicken, and mix well.
- Garnish with spring onions and a sprinkle of sesame seed. Serve with rice and enjoy!
