Crispy Orange Chicken with Rice

Serves 4  500 Calories per portion – 48g protein-56g carbs-10g fat

Ingredients

For the Crispy Chicken:
  • 800g Chicken boneless, cubed
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Garlic Powder
  • 2 tsp Paprika
  • 40g Cornflour
For the Sticky Orange Sauce:
  • 350ml Orange Juice, preferably fresh
  • 50ml Low Sodium Soy Sauce
  • 30g Honey
  • 10g Cornflour
  • 50ml Water
  • 1 tsp Chilli Flakes
  • 3 Garlic cloves, minced
  • 1 tbsp Ginger, finely chopped
  • Orange Zest, optional
To Serve:
  • 207g Uncooked Basmati Rice
  • Sesame Seeds
  • Spring Onions, chopped

Method

  1. Boil the rice according to the instructions on the packet.
  2. Preheat the oven to 200c.
  3. In a bowl, add the spices and cornflour to the chicken, and mix thoroughly, making sure each piece of chicken is coated evenly.
  4. Spread the chicken on a baking tray, and bake for 20 minutes, or until the chicken is cooked through and nice and crispy (You could fry the chicken in 2 tsp oil, if you don’t want to bake it).
  5. In a pan, add the ginger, garlic, and chilli flakes, and cook for 2 minutes.
  6. Add the orange juice, soy sauce, honey, and orange zest, and cook on a medium heat until it reduces.
  7. Mix the water and cornflour, the stir it into the orange sauce. Cook until it starts to thicken.
  8. Add the chicken, and mix well.
  9. Garnish with spring onions and a sprinkle of sesame seed. Serve with rice and enjoy!
