Eton Mess

Ingredients

  • 8 meringues
  • 600ml double cream
  • 6 tablespoons caster sugar
  • 600g strawberries, sliced in half

Method

  1. Whip the double cream, with 2 tablespoons of sugar, till soft peaks form. Refrigerate.
  2. Lightly mash the strawberries with 4 tablespoons of sugar.
  3. Just before serving, combine the whipped cream and mashed strawberries.
  4. Break the meringues into small and large pieces.
  5. Just before serving, gently mix the whipped cream and mashed strawberries. Add some of the broken meringues and fold through. Spoon into dessert bowls or glasses. Sprinkle the rest of the meringues on top.
