Fillet-O-Fish

Serves 4 – 346 calories per burger – 37g protein-33g carbs-8g fat

Ingredients

For the Fish:
  • 340g Raw White Fish (I use Basa), patted dry and cut into 4 equal pieces
  • Salt and Pepper, for seasoning fish fillets
  • 1 Egg
  • 40g Breadcrumbs
  • 4 Toasted Buns
  • 4 Slices Cheddar Cheese
For the Sauce:
  • 20g Light Mayonnaise
  • 55g Low Fat Greek Yoghurt
  • 1 tbsp Dried Dill
  • 10g Gherkins, finely chopped
  • Salt and Pepper, to taste

Method

  1. Season the fish fillets with salt and pepper, then dip in the egg, and coat in breadcrumbs.
  2. Bake in a preheated oven at 220c for 15 minutes, turning halfway through.
  3. While the fish fillets are baking, make the sauce by adding all the sauce ingredients, and mixing thoroughly.
  4. Serve the Fish fillets in a bun with the sauce.

Great for meal prepping. This recipe makes 4 servings. Each serving contains 346 Calories. Can be stored in the fridge for up to 5 days.
