Garlic Parmesan Chicken and Creamy Mash

Serves 4  569 calories per portion -57g protein-46g carbs-17g fat

Ingredients

For the Parmesan Chicken:
  • 800g Chicken Boneless, cut into thin strips
  • 2 tsp Salt
  • 2 tsp Smoked Paprika
  • 2 tsp Garlic Powder
  • 3 tsp Italian Herbs
  • 3 tsp Olive Oil
  • 40g Parmesan
For the Creamy Mash Potatoes:
  • 900g Raw Potatoes, cut into small cubes and boiled
  • 15g Light Butter
  • 100ml Evaporated Milk
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
For the Creamy Sauce:
  • 250ml Milk
  • 150g Light Cream Cheese
  • 20g Parmesan
  • 1/2 tsp Salt
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Italian Herbs

Method

For the Parmesan Chicken:
  1. In a bowl, mix together the chicken strips, olive oil, and herbs and spices.
  2. Evenly coat each strip in Parmesan.
  3. In a non-stick frying pan, without any oil or butter, cook the chicken strips on a medium to low heat for about 4 minutes, until golden and crispy.
For the Creamy Mash Potatoes:
  1. In a large pan, boil the potatoes until they can be easily broken with a fork, then drain.
  2. Add the butter, evaporated milk, and spices to the potatoes, and mash until light and fluffy.
For the Creamy Sauce:
  1. In a small pan, add the milk, herbs, and spices, and bring to the boil.
  2. Lower the heat, and whisk in the cream cheese and parmesan. Cook until it starts to thicken.
  3. Drizzle over the Parmesan Chicken and Creamy Mash before serving.

Great for meal prepping. This makes 4 servings of 569 calories each. Can be stored in the fridge for up to 5 days.
