Serves 4 430 Calories per portion -41g protein-42g carbs-11g fat
Ingredients
For the Chicken:
- 700g Chicken boneless, cubed
- 1 tsp Salt
- 1 tsp Chilli powder
- 1 tbsp Oregano
- 1 tbsp Cumin powder
- 1 tbsp Paprika
- 1 tbsp Garlic powder
- 1 tsp Olive oil
- 1/2 Lemon juice
For the Golden Rice:
- 207g Uncooked Basmati rice
- 1/2 tsp Turmeric
- 1/2 tsp Cumin powder
- 1/2 tsp Paprika
- 1 tsp Salt
For the sauce:
- 150g Fat free Greek yoghurt
- 50g Light Mayo
- 2 Garlic cloves, minced
- 1/2 tsp Cumin powder
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 Lemon juice
- Chopped Coriander, handful
For the Salad:
- Shredded Lettuce
- Sliced Tomatoes
Method
- Wash and soak the rice. Bring a pan of water to the boil. Add the soaked rice, and spices, and boil on a low heat until cooked. Drain.
- To prepare the chicken, add all the herbs, spices, lemon juice, and olive oil, and mix thoroughly. Fry in a pan for 3-4 minutes, or until cooked through.
- To make the sauce, add all the sauce ingredients together, and mix 🙂
- Serve the chicken, rice, and salad with the sauce drizzled over. If meal prepping, store the salad separately, so the chicken and rice can be heated easily. Enjoy!
