Halal Cart Chicken and Golden Rice

Serves 4  430 Calories per portion -41g protein-42g carbs-11g fat

Ingredients

For the Chicken:
  • 700g Chicken boneless, cubed
  • 1 tsp Salt
  • 1 tsp Chilli powder
  • 1 tbsp Oregano
  • 1 tbsp Cumin powder
  • 1 tbsp Paprika
  • 1 tbsp Garlic powder
  • 1 tsp Olive oil
  • 1/2 Lemon juice
For the Golden Rice:
  • 207g Uncooked Basmati rice
  • 1/2 tsp Turmeric
  • 1/2 tsp Cumin powder
  • 1/2 tsp Paprika
  • 1 tsp Salt
For the sauce:
  • 150g Fat free Greek yoghurt
  • 50g Light Mayo
  • 2 Garlic cloves, minced
  • 1/2 tsp Cumin powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 Lemon juice
  • Chopped Coriander, handful
For the Salad:
  • Shredded Lettuce
  • Sliced Tomatoes

Method

  1. Wash and soak the rice. Bring a pan of water to the boil. Add the soaked rice, and spices, and boil on a low heat until cooked. Drain.
  2. To prepare the chicken, add all the herbs, spices, lemon juice, and olive oil, and mix thoroughly. Fry in a pan for 3-4 minutes, or until cooked through.
  3. To make the sauce, add all the sauce ingredients together, and mix 🙂
  4. Serve the chicken, rice, and salad with the sauce drizzled over. If meal prepping, store the salad separately, so the chicken and rice can be heated easily. Enjoy!
