Ingredients
For the Mince:
- 800g Lean Beef Mince
- 80g Soy Sauce
- 30g Honey
- 5 Garlic Cloves, minced
- 25g Gochujang, or 15g Sriracha Sauce and 10g Chilli Garlic Sauce
- 10ml Sesame Oil
- 1 tsp Sesame Seeds
- 2 Spring Onions, chopped
For the Pickled Cucumbers:
- 1 Cucumber, sliced
- 1 Large Carrot, grated
- 20g Soy Sauce
- 10g Rice Vinegar
- 1 tsp Garlic Powder
- 1 tsp Chilli Flakes
- 1 tsp Sesame Seeds
For the Spicy Lemon Mayo:
- 50g Light Mayo
- 25g Sriracha
- 1/2 tsp Garlic Powder
- 1/2 Lemon Juice
- 560g Boiled Rice (140g per serving)
Method
For the Mince:
- In a bowl, add the soy sauce, honey, gochujang (or substitute), garlic, sesame oil, and sesame seeds. Mix well.
- In a pan, fry the mince for about 5 minutes, then add the sauce mix and spring onions. Fry until golden and crispy.
For the Pickled Cucumbers:
- In a bowl, add the sliced cucumbers and grated carrots, and mix.
- Add the soy sauce, rice vinegar, garlic powder, chilli flakes, and sesame seeds, and mix thoroughly. Set aside.
For the Spicy Lemon Mayo:
- In a bowl, add the mayo, sriracha, garlic powder, and lemon juice, and mix.
Serve with boiled rice. Garnish with sesame seeds, and enjoy!
