Pea Pulao

Ingredients

  • 500g Frozen Peas
  • 3 cups Basmati Rice
  • 1 Medium Onion, Finely sliced
  • 2tbsp Garlic paste
  • 4 tsp Salt
  • 1tsp Cumin seeds
  • 1tsp Whole Black Peppercorns
  • 1inch stick Cinnamon
  • 1/2 teaspoon whole Cloves
  • 3 Whole Black Cardamoms
  • 4 Cups Water
  • Oil for frying

Method

  1. In a large pan, heat the oil and fry onion until golden brown.
  2. Add the garlic paste, salt, cumin seeds, black peppercorns, cinnamon, cloves and cardamoms, and fry until golden and oil separates from the garlic paste.
  3. Add the peas and fry for a couple of minutes.
  4. Add the rice and  water and mix together.
  5. Cover and leave to cook on a medium heat, until the water has almost dried. Stir occasionally. Check a couple of the grains of rice to make sure they are not hard. If they are, sprinkle 1/4 cup water over the rice, cover and cook for another 5 minutes.
  6. Cover tightly, and leave to cook, undisturbed, on the lowest simmer for about 15 minutes.

Is great with Koftas or Qorma, or just as good with plain yoghurt or Raita.
