Ingredients
- 500g Frozen Peas
- 3 cups Basmati Rice
- 1 Medium Onion, Finely sliced
- 2tbsp Garlic paste
- 4 tsp Salt
- 1tsp Cumin seeds
- 1tsp Whole Black Peppercorns
- 1inch stick Cinnamon
- 1/2 teaspoon whole Cloves
- 3 Whole Black Cardamoms
- 4 Cups Water
- Oil for frying
Method
- In a large pan, heat the oil and fry onion until golden brown.
- Add the garlic paste, salt, cumin seeds, black peppercorns, cinnamon, cloves and cardamoms, and fry until golden and oil separates from the garlic paste.
- Add the peas and fry for a couple of minutes.
- Add the rice and water and mix together.
- Cover and leave to cook on a medium heat, until the water has almost dried. Stir occasionally. Check a couple of the grains of rice to make sure they are not hard. If they are, sprinkle 1/4 cup water over the rice, cover and cook for another 5 minutes.
- Cover tightly, and leave to cook, undisturbed, on the lowest simmer for about 15 minutes.
Is great with Koftas or Qorma, or just as good with plain yoghurt or Raita.
