Smoked Paprika Chicken roast

Ingredients:

  • 4 Chicken Legs (bone-in, skin-on)
  • 2 tablespoons of olive oil
  • 2 teaspoons of smoked paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 lemon, halved
  • Fresh herbs (such as thyme or rosemary)

Method:

  1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. In a small bowl, combine the smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Rub the chicken breasts with olive oil and then liberally apply the spice mix all over the chicken, ensuring to coat evenly.
  4. Place the seasoned chicken in a roasting pan. Squeeze the lemon halves over the chicken and place the squeezed lemon halves in the pan alongside the chicken.
  5. Scatter fresh herbs around the chicken for enhanced flavor.
  6. Roast in the oven for about 45-55 minutes or until the chicken is thoroughly cooked and the juices run clear when you cut into the thickest part of the leg.
  7. Remove from the oven and let the chicken rest for a few minutes before serving.
